Gazpacho & Rosé, the Ideal Summer Pairing
Gazpacho is a summer soup made for the warmer months. The main ingredient is fresh, ripe tomatoes, which we grow abundantly in our organic garden on the Eco Terreno wine farm. To celebrate it’s release we wanted to share a recipe for Gazpacho, the chilled, tomato based soup. This is a favorite summer recipe from Mark Lyon. When he tasted Rosalena once it was ready for release, he instantly thought of pairing it with Gazpacho. The acidity of the tomatoes match the vibrancy and fruitiness of this delicate Rosé.
What is Gazpacho?
Gazpacho is a fascinating dish with a rich history! It’s traditionally associated with Spanish cuisine; some say it may have come from the Romans. While it’s commonly known today as a cold tomato-based soup, its origins are more complex.
The term “gazpacho” is believed to come from the Latin *caccabaceus*, which refers to a type of bread. However, the modern version of gazpacho as a cold soup is a product of Spanish culinary tradition, evolving over time from simpler, rustic dishes that included stale bread, vegetables, and olive oil.
Gazpacho is especially popular in the hot summer months due to its refreshing qualities. It’s versatile enough to be served at any meal of the day and is enjoyed for its vibrant flavors and health benefits. Different variations exist, but the classic Andalusian gazpacho typically includes tomatoes, cucumbers, bell peppers, onions, garlic, olive oil, vinegar, and stale bread.
Ingredients for Gazpacho
– 2.5 lbs ripe tomatoes
– 1 green bell pepper, seeded & chopped
– 1-2 slices stale bread, crust removed & crumbled
– 1-2 garlic cloves, peeled
– 1 cucumber
– Slightly under 1/2 cup of olive oil
– 2-3 tsps sherry vinegar
– Sea salt to taste
Steps to make Gazpacho
1. Soak the bread in water, then squeeze out the excess.
2. Place the tomatoes, green bell pepper, garlic, cucumber, and bread in a blender. Blend until smooth, adding the olive oil gradually.
3. Chill the mixture in the fridge until ready to serve. Garnish with diced cucumber.
