Seasonal Vegetable Pasta Recipe

Vegetable Pasta & a glass of Rosé - a pairing perfect for the spring season.
We're fortunate to have a produce garden at Eco Terreno that is teaming with delicious, fresh, organically grown vegetables. It's demanding to be made into a bowl of pasta, where the vegetables take center stage. Pair it alongside a glass of our 2022 Old Vine Rosé of Cabernet Sauvignon to bring out the freshness of this vibrant dish.

Ingredients

  • 1 lb preferred pasta (penne, fettuccine, spaghetti, or rigatoni)
  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 pint cherry tomatoes, halved
  • 3–4 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • ½–1 cup reserved pasta water
  • ¼ cup fresh basil leaves, chopped or torn
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

Preparation

  1. Cook the pasta.
    Bring a large pot of generously salted water to a boil. Cook your preferred pasta according to the package directions until al dente. Before draining, reserve 1 cup of the pasta water.
  2. Sauté the vegetables.
    While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the zucchini and squash, cooking for 3–4 minutes. Stir in the garlic and halved cherry tomatoes, then continue cooking for another 2–3 minutes, just until the tomatoes begin to soften and release their juices. Season with salt and freshly ground black pepper.
  3. Combine everything.
    Add the drained pasta to the skillet with the vegetables. Pour in about ½ cup of the reserved pasta water and toss to combine. Stir in the grated Parmesan cheese, adding more pasta water as needed until the cheese melts into a light, silky sauce that coats the pasta.
  4. Serve.
    Divide the pasta among serving bowls. Top with additional freshly grated Parmesan cheese and garnish with fresh basil. Serve immediately.
  5. Optional: Finish with a drizzle of extra virgin olive oil, a squeeze of fresh lemon juice, or a pinch of red pepper flakes for an extra burst of flavor.
